Yes, it can be done! R was quite skeptical when I told him I was making Salmon for dinner. In the crockpot. Fridays are crazy busy in the afternoons. GA gets home from school around 2:30 and then we have to leave for our Daisy Scout meeting at 3:15. We normally get home around 4:45pm and then have to turn around and leave again at 5:40 for soccer practice. So, I've been trying to do quick dinners on Fridays to get us out of the house on time.
I came across this recipe last week and thought I would give it a try. I didn't have a cedar plank, so I just made a foil packet like she suggests. I also used a sprig of fresh rosemary since our rosemary bush is HUGE. This turned out great! Slightly sweet and savory and the house didn't smell like fish at all. R said he was pleasantly surprised and everyone gobbled it up!
Here's the recipe as I used it:
1.25 lbs salmon filet
1 tsp each of cumin, salt, garlic powder and onion powder
1 sprig of fresh rosemary
2 limes, sliced
1 Tbs (or so) of honey
Place fish onto large piece of foil. Mix dry spices and rub onto salmon. Drizzle with honey. Top with rosemary and limes. Fold up foil into a packet and refrigerate for an hour or so. Place packet into crockpot and loosen the top foil to make room for steaming the fish. Cook on low for 2-2.5 hours. Remove limes and rosemary before serving. Enjoy!
